チェンマイ
Chiang Mai Province in northern Thailand, where mountains and a city meet. Names for plants and dishes move among markets, eateries, and mountain settlements, making field research on bitterness both complex and rich.

Reading the bitterness
For the San Kamphaeng Hot Springs in Chiang Mai Province, a municipal site states that the spring spouts more than 10 meters and reaches a temperature of 105 degrees Celsius, and that an egg can be boiled until cooked in less than 10 minutes. This is content given in San Kamphaeng's tourism information, not a temperature or time measured independently by a third party.
The history of the same facility records that a geothermal power feasibility study was conducted in 1972-1983, drilling reached a depth of 283 meters, and the plan was discontinued for reasons of profitability. It then opened as a hot-spring tourist site in 1984. The historical account and the tourism information about boiling eggs can be read as separate pieces of information about the same San Kamphaeng Hot Springs.

Note: This historical description does not include 「卵を茹でる」 (in translation: "boiling eggs") as a use. Boiled eggs (ต้มไข่) are described as a present-day visitor activity in the tourism section of the same page. That is a separate context from this historical account of livestock care, mineral bathing, and boiling bamboo shoots. Masaru’s on-site observation of boiling eggs at the spring is consistent with describing it as 「後発の観光活動」 (in translation: "a later visitor activity").

Note: One travel-media article (a lower-priority source) supports egg boiling as an activity at a northern Thai hot spring other than San Kamphaeng. Its temperature and geyser figures have not been independently verified. Because it is run by a national park (a state body), its operator differs from cooperative-associated San Kamphaeng.
