NIGAMI LAB in English

NIGAMI LAB is a Japanese knowledge base on bitterness: what makes foods bitter, how preparation moves bitterness, and what has and has not been measured. Every claim is stored with its sources and a confidence label (established, supported, preliminary, contested, contextual, observation, unverified), following the lab's research protocol. The lab does not cover health effects, toxicity or safety, and does not rank brands.

The English edition starts with the topic hubs below. Links into the encyclopedia and the research notes go to the Japanese pages; the Threads feed and browsers translate them.
