Reading the bitterness
Igbo food culture is the system of dishes passed down among Igbo people in southeastern Nigeria. One recorded dish in this system is onugbu soup, made with Vernonia amygdalina, commonly called bitter leaf; a food-chemistry paper names it as an example of a regional dish. The idea of incorporating leaves that, as their name indicates, are bitter into a dish as a soup ingredient is the starting point here.
A separate survey records how the bitter leaf is handled. A traditional-food-systems study spanning 4 states and 8 communities combined interviews with key informants, focus groups, and questionnaires. It describes onugbu (Vernonia) as 「苦く、使う前に通常洗う」 (in translation: "bitter and usually washed before use"). It does not give the number of washes or a target level of reduced bitterness. The earlier paper mentioning onugbu soup is a food-chemistry paper that refers to food culture as background, not a primary ethnographic account of regional culture.
