Reading the bitterness

ECG (epicatechin gallate) is one of the galloylated catechins found in green tea. In a 2018 study that modeled green tea infusion in relation to concentration and taste, ECG concentration was treated as one of 2 catechin indices showing high correlation with bitterness.

In the same study, ECG concentration also correlated with astringency, positioning it as a component involved in both bitterness and astringency. As an example of a single compound linking to 2 different sensory dimensions depending on concentration, it serves as a clue for understanding green tea flavor development.

However, these correlations are specific to the sample used in that study and the concentration-taste response model, and cannot be treated as universal conversion equations. If interactions with other components in the mixture or preparation conditions change, the strength of the correlation may also change.
