Reading the bitterness

Protodioscin is one of the steroid saponins found in fenugreek. A 2012 research paper explicitly states in its background description that fenugreek contains 「protodioscinなどの苦味サポニン」 (in translation: "bitter saponins such as protodioscin"), and protodioscin is cited as a representative example of saponins related to fenugreek bitterness. However, this is a description in terms of chemical bitter attribution and does not involve sensory verification of protodioscin in isolation.

Protodioscin is found not only in fenugreek but also in asparagus spears. A 2021 metabolomics study using LC-MS and NMR compared green spears and white spears and reported that steroid saponins such as protodioscin and shatavarin are significantly more abundant in white spears. However, this study did not collect absolute concentration values, and it cannot be confirmed from this report how quantitative differences in protodioscin relate to asparagus bitterness perception itself.

fenugreek seed — bitterness is attributed to: protodioscinsupported

Scope: fenugreek seeds

Note: Bitter attribution comes from the original source's background description and does not involve sensory verification of the isolated compound.

The abstract explicitly states that fenugreek contains 「protodioscin などの bitter saponins」 (in translation: "bitter saponins such as protodioscin"). Here, only the chemical bitter attribution is included, and the therapeutic context of the abstract is not adopted.
Limitations: The abstract does not contain quantitative sensory data for bitter saponins.

protodioscin occurs in white asparagussupported

Note: Reusing compound-protodioscin already recorded in the fenugreek context for the asparagus context.

Steroid saponins (protodioscin, shatavarin, etc.) are reported to be significantly more abundant in white type.
Limitations: Absolute concentration values were not collected in this investigation.
