ケルシュ

Centered on the balance among malt, fruitiness, and hops, this judging style for top-fermenting beer from Cologne (BJCP 2021) rates bitterness from somewhat low to medium, with an 18–30 IBU guideline; a note adds that dry examples can taste more bitter than the number suggests.

Reading the bitterness

Kölsch is a beer style cold-matured after top fermentation. Judging looks for balance among malt, fruitiness, and hops rather than one of them dominating. The 18–30 IBU guideline is one number describing that balance, not a guarantee of a product's taste.

Kölsch bitterness is judged somewhat low to medium. Even within the category, balance varies, and a note says bitterness can stand out more than the number suggests in dry examples. These are judging considerations, not a formula converting IBU into perceived intensity.

For Kölsch, the two guidelines place the range of bitterness intensity at opposite ends. BJCP puts bitterness from somewhat low to medium, while the Brewers Association (BA) 2025 edition gives "Medium to medium-high". The IBU range is 18–30 for BJCP and 22-30 for BA, with the same upper bound. Because a range with a matching upper bound is assigned words from the low side by one and the high side by the other, the words in a guideline need to be read separately from the numbers.
