Reading the bitterness

Smoked Beer is a category judged by combining smoke character with a base beer. IBU is not set uniformly; it depends on the base style. Strong smoke impression does not automatically mean strong hop bitterness. Standard and specialty bases are organized in separate categories.

Smoked Beer judging distinguishes bitterness appropriate to the base from harsh, bitter smoke-derived flavor. The latter and strong astringency are undesirable. Stronger smoke does not automatically raise the rating; balance with the base matters. This is guidance for judging, not a measurement of smoke-component effects.

For smoked beer, neither guideline fixes bitterness to one value within the style. The Brewers Association (BA) 2025 edition's Smoke Beer gives bitterness as "Varies with underlying beer style" and BJCP's 32A and 32B likewise set no common range for numbers such as IBU, leaving it to the base beer. BJCP further treats harsh, bitter flavor from smoke and strong astringency as flaws. This can be read as a division of roles: the amount of bitterness is decided by the base style, while the smoke side is required not to add a harsh bitterness.

Smoked beer (BJCP style category) has a defining sensory theme: Brewers Association 2025 style guideline values: Perceived bitterness: "Varies with underlying beer style"contextual

Scope: Brewers Association's official style guidelines, Smoke Beer category

Note: Source text: "Perceived bitterness: Varies with underlying beer style" Recorded as an industry-association standard independent of BJCP, for comparison with BJCP 2021's sensory description of the same style, which treats harsh, bitter flavor from smoke and strong astringency as undesirable characteristics and does not set IBU uniformly, treating it according to the base style (32A and 32B). It is a judging and classification-level description, not the result of a sensory experiment.

As part of the style specification for Smoke Beer, Perceived bitterness is specified as Varies with underlying beer style.
Limitations: The guideline itself notes elsewhere that IBU numbers can diverge from perceived bitterness. The sensory description is a judging-level guide, not a measured value for commercial products or a universal perceptual intensity.
