Reading the bitterness
Japan’s beverage market widely distributes ready-to-drink(RTD) canned and bottled coffees. Official descriptions of some unsweetened black products foreground bitterness. On the product page for its unsweetened canned coffee 『UCC BLACK無糖 黒の余韻』 (in translation: "UCC BLACK Unsweetened: The Lingering Note of Black"), UCC Ueshima Coffee’s official online store heads the page 「上質な苦みと余韻」 (in translation: "a refined bitterness and lingering note") and says in the body that extraction at 2 temperature ranges (high and low) brings out 「雑味のない「上質な苦み」「余韻」を引き出した」 (in translation: "brought out refined bitterness and a lingering note without off-flavors").
Even within the same maker and brand, use of bitterness terms is not uniform. The standard line 『UCC BLACK無糖 缶185g』 (in translation: "UCC BLACK Unsweetened, 185 g can") does not mention bitterness, instead describing 「王道のキレとコク」 (in translation: "the classic sharp finish and body/richness"). In Asahi Soft Drinks’ WONDA range, the morning-oriented unsweetened black 『モーニングショット』 (in translation: "Morning Shot") emphasizes bitterness with 「キリッと苦い味わいで気持ちよく仕事に向かえる」 (in translation: "a crisp, bitter taste to get you cheerfully into work"), whereas the lightly sweetened 『金の微糖』 (in translation: "Kin no Bitō (Gold, Lightly Sweetened)") uses no bitterness term and describes 「ちょうどよい甘さ」 (in translation: "just the right sweetness"). At Pokka Sapporo the pattern reverses: 『ポッカコーヒーオリジナル』 (in translation: "Pokka Coffee Original") uses the bitterness term 「ほろ苦いコーヒーの味わいとほどよい甘さ」 (in translation: "a gently bitter coffee flavor and just-right sweetness"), while 『ポッカコーヒーブラック』 (in translation: "Pokka Coffee Black") uses none, describing 「マイルドでバランスのよい味わい」 (in translation: "a mild, well-balanced flavor").
Official descriptions of a dozen or so products, including Coca-Cola Japan’s current 5 Georgia varieties, Kirin Fire, DyDo Blend, and Ito En’s TULLY'S COFFEE BARISTA'S BLACK, do not use bitterness terms even where unsweetened black products are included. Instead, they describe taste through 「コク」 (in translation: "body/richness"), 「キレ」 (in translation: "sharp finish"), 「香ばしさ」 (in translation: "roasted aroma"), and 「すっきり」 (in translation: "crisp/clean"). Differentiated brands such as Maruyama Coffee, Sarutahiko Coffee, and Starbucks chilled cups likewise avoid bitterness vocabulary, including in unsweetened black products, using terms such as 「酸味」 (in translation: "acidity"), 「香り」 (in translation: "aroma"), 「質感」 (in translation: "texture"), and 「上品な甘さ」 (in translation: "refined sweetness").

Scope: UCC's official online store; Japan's mass-distribution RTD canned-coffee market, unsweetened-black segment
Note: Original headline: 「上質な苦みと余韻」 (in translation: "a refined bitterness and lingering note"). Original body copy states that, through its particular roasting method and 2-temperature extraction (high and low), it draws out a 「上質な苦み」 (in translation: "refined bitterness") and 「余韻」 (in translation: "lingering note") free of off-flavors. This is an example on the mass-distribution side (canned coffee) that foregrounds bitterness rather than removing it, and it is material that does not allow a simplified H10 reformulation.
