Reading the bitterness

Hainanese Nanyang migrants were Chinese migrants from Hainan Island who moved during the 19th–20th centuries to Southeast Asian places including Malaya, Singapore, and the Dutch East Indies (the so-called 「南洋」; in translation: "Nanyang, the South Seas"). Hainanese people are recorded as practitioners of the kopitiam coffeehouse format and of a kopi-roasting method using margarine and sugar with Robusta beans. A portal operated by a cultural center says that Hainanese roasters established this kopi-roasting technique.

An official Singapore government-agency portal published in 2019 also uses the expression "Hainanese-style kopi(coffee)" to connect kopi drinking culture with Hainanese practitioners.

Singapore's National Heritage Board Intangible Cultural Heritage inventory records that many coffee shops serving Nanyang breakfast were traditionally run by Hainanese people. The same record states that, over time, different ethnic and dialect groups also joined this trade. What can be read from this is the positioning of practitioners within a specific breakfast food culture, not a determination of the ethnic makeup of every kopi shop or a single inventor of the kopi technique.
