Reading the bitterness

Saison is a Belgian-ale style spanning different strengths and colors. Judging distinguishes pale from dark examples and alcohol strengths rather than fixing one form. Its 20–35 IBU guideline describes the style's range; it is not a measured value for each product.

Saison judging considers finish dryness alongside bitterness intensity. The role of malt differs between pale and dark versions, and sour variants are permitted. Treating all saisons as one bitterness design from IBU alone would miss the range allowed by the guide.

Saison is a style in which the numeric value and the words for bitterness diverge between the two guidelines. The IBU range is 20–35 for BJCP and 20-38 for the Brewers Association (BA) 2025 edition, and the two largely overlap. Yet the two describe the degree of bitterness differently: BJCP calls for a medium-to-strong range with a dry finish, while BA writes "Medium-low to medium, but not assertive." Within almost the same IBU range, one assigns a stronger bitterness and the other a more restrained bitterness. The IBU range alone does not determine the degree of bitterness the style calls for.
