Reading the bitterness
Ilex kudingcha C.J. Tseng is a holly-family plant also written 「クーディンチャ」 (in translation: "kudingcha"). A review explicitly names it as one of the source plants for large-leaved kudingcha drunk in China.
The same review says that saponins are thought to be one source of bitterness shared by large-leaved kudingcha (a collective name for Ilex latifolia and Ilex kudingcha) and yerba mate. This is, however, a synthesis of multiple earlier studies cited by the review; the passage gives neither specific chemical structures nor amounts of the saponins.
