Reading the bitterness

Lambic is a beer linked to Belgium's spontaneous-fermentation tradition. This entry covers the Lambic judging category separately from blended Gueuze and fruit-containing Fruit Lambic. Its bitterness guideline is 0–10 IBU, while the description centers on sourness balance more than hop bitterness.

The Lambic judging description positions aged hops as used more for preservation than for bitterness. This cannot be recast as 「ホップを使わない」 (in translation: "does not use hops") or 「苦味成分が全く無い」 (in translation: "contains no bitter constituents at all"). It separates a style's sensory description from use of ingredients and presence of constituents.

For Lambic, the wording for bitterness agrees even though the numeric ranges do not overlap. BJCP places hop bitterness at a level that is barely perceived, and the Brewers Association (BA) 2025 edition likewise gives bitterness as "Very low". Yet the IBU range is 0–10 for BJCP and 11-23 for BA, and the two ranges share no common value. Both describe a bitterness that is barely felt, while drawing the numeric range in different places. This is a case where the IBU number and the words for the degree of bitterness do not correspond one-to-one, even between guidelines.
