Note: The sequence for making tencha is: steam shade-grown new shoots, dry them without rolling (rough tea), then remove stems and veins (finished tencha).
Explains the sequence: 「摘んだ茶葉をムラのないように蒸気で蒸します」 (in translation: "Steam the picked leaves evenly"), 「茶葉を揉まないですぐに乾燥させます。これを荒茶といいます」 (in translation: "Dry the leaves without rolling them; this is called rough tea"), 「茎や葉脈などを取り除き、柔らかな茶葉だけにします」 (in translation: "Remove stems and veins, leaving only tender leaves"), and 「この柔らかい茶葉を、仕上碾茶といいます」 (in translation: "These tender leaves are called finished tencha").
Limitations: No numerical steaming time or drying temperature is given.
