Reading the bitterness
The EU geographical-indication (PGI) specification (2008) defines Radicchio di Chioggia as a red chicory belonging to the silvestre variety (var. silvestre) of the species Cichorium intybus in the Asteraceae family, and as consisting of 2 types, early and late. The spelling inthybus also appears in the original text, but this is a normalized spelling as Cichorium intybus.
Article 5 (production and harvesting techniques) of the 2003 production specification (disciplinare) specifies harvesting only as cutting the root below the head; the subsequent process is limited to trimming (toelettatura) in the field or at a collection point. The terms shading and blanching (forzatura and imbianchimento), which appear in specifications for the Verona late type and Treviso late type, do not occur anywhere in the full text of this disciplinare for either the precoce or tardivo type. However, this is the negative fact that the document does not contain those terms and does not comprehensively deny practices at production sites.
