Reading the bitterness

The late type, tipo tardivo, of Verona-type red chicory (Radicchio di Verona) is a variety category that the EU geographical-indication specification states may undergo forcing (softening cultivation) and blanching (color removal by shading). The same specification lists crisp texture and slight bitterness as typical attributes of plants undergoing these processes. Here bitterness is not described as a defect to be removed, but as one of the tastes characterizing this late type.

According to the current specification, forcing and blanching involve managing light, humidity, and temperature to restart plant growth, but the methods themselves may change with climate and technological changes. Thus, even under the same name tipo tardivo, process details may differ by year and production area. This description comes from a legal product specification and is not a result in which a trained sensory panel gave numerical bitterness intensities for individual plants.

Sensory (1)

Radicchio di Verona tipo tardivo — sensory attribute: bitternesssupported

Scope: EU specification’s tipo tardivo

Note: Slight bitterness is listed as a typical attribute after forcing and blanching.

It states that the forcing and blanching process produces typical crispness and a slightly bitter taste.
Limitations: The causal link between the process and the attribute is an explanation in the specification document.

Art.2: "per il tipo tardivo, dopo l'intervento di forzatura ed imbianchimento, le foglie acquisiscono la tipicità di croccantezza e di gusto leggermente amarognolo" (in translation: "for the late type, after forcing and blanching, the leaves acquire the typical crispness and slightly bitter taste"). Art.5: It similarly stipulates that after the forzatura-imbianchimento process the product reaches "gusto leggermente amarognolo tipiche del Radicchio di Verona" (in translation: "the slightly bitter taste typical of Radicchio di Verona"). Art.6 (legame con l'ambiente, the link with the environment) explicitly identifies "la particolare croccantezza delle foglie, il colore rosso intenso ed il sapore leggermente amarognolo" (in translation: "the particular crispness of the leaves, the intense red color, and the slightly bitter flavor") as features distinguishing it from other products in the same category. The sensory description of the precoce type does not use bitterness terms such as amarognolo, and describes only color and shape.
Limitations: This is a description in a specification document, not a measurement by a sensory panel. Unlike Treviso/Castelfranco (gradevolmente amarognolo), Verona tardivo consistently uses "leggermente amarognolo" (in translation: "slightly bitter").
