Reading the bitterness
「怡保白咖啡」 (Ipoh white coffee) is coffee described as originating in Ipoh, Malaysia. It is gently roasted to a medium degree with palm-oil margarine alone, without the sugar or wheat flour used in ordinary dark roasting, and is usually served with sweetened condensed milk. Several sources convey the substance of 「マーガリンのみ、砂糖なしで、より浅い焙煎に仕上がる」 (in translation: "only margarine, no sugar, resulting in a lighter roast"), but all are secondary or tertiary sources, such as news sites, specialist media articles, and encyclopedia articles, rather than primary academic analyses.
Its origin is described as tracing back to Hainanese immigrants Wong Por Chou and his younger brother Wong Por Tin opening 「新源隆」 (in translation: "Xin Yuan Long") in Ipoh Old Town and establishing a technique of gentle roasting with palm-oil margarine. The innovation of adding sweetened condensed milk is traditionally attributed to Wong Por Tin, a Hainanese cook. The opening year and address appear in only one Malaysian news-site article, and primary material from the shop itself could not be reached in this investigation.
Coffee-specialist media explain that, whereas ordinary black kopi is roasted with both margarine and sugar, Ipoh white coffee is roasted with margarine alone (or less sugar than usual), resulting in a lighter roast and color. However, these sources only describe differences in roasting adjuncts, color, and roast degree; within the sources consulted, no description was found that directly measured or stated how this difference in technique affects bitterness intensity itself.
